Τα βραβεία Νόμπελ της τρελής επιστήμης (Ig Nobel) δίνονται σε αντισυμβατικές μελέτες και ανακαλύψεις, πολλές από τις οποίες δημοσιεύονται ακόμα και σε σοβαρά επιστημονικά περιοδικά. Mε σύνθημα «πρώτα σε κάνουν να γελάσεις, μετά να σκεφθείς», τα βραβεία Ig απονέμονται από το χιουμοριστικό επιστημονικό περιοδικό «Annals of Improbable Research».

Το Βραβείο Νόμπελ τρελής Φυσικής 2025 απονεμήθηκε σε μια ομάδα επιστημόνων, για τη μελέτη τους στο διαγραμμα φάσεων της σάλτσας με τριμένο τυρί στην μακαρονάδα κάτσιο ε πέπε που είναι διάσημη στην Ιταλία. Τα ζυμαρικά «Pasta alla Cacio e pepe» είναι ένα παραδοσιακό ιταλικό πιάτο που παρασκευάζεται με ζυμαρικά, τυρί πεκορίνο και πιπέρι. Παρά την απλή λίστα συστατικών του, η επίτευξη της τέλειας υφής και κρεμώδους γεύσης της σάλτσας μπορεί να είναι δύσκολη.

Η μελέτη των ερευνητών Bartolucci et al με τίτλο «Phase behavior of Cacio e Pepe sauce» διερευνά συστηματικά την συμπεριφορά φάσης της σάλτσας κάτσιο ε πέπε, εστιάζοντας στην σταθερότητά της σε αυξανόμενες θερμοκρασίες για διάφορες αναλογίες τυριού, νερού και αμύλου. Οριοθετεί την κατάσταση όπου οι συγκεντρώσεις αμύλου κάτω από 1% (σε σχέση με τη μάζα του τυριού) οδηγούν στον σχηματισμό συσσωματωμάτων σε ολόκληρο το σύστημα, μια κατάσταση που καθορίζει αυτό που ονομάζουν «Φάση Μοτσαρέλας» και αντιστοιχεί σε μια άνοστη και ανομοιογενή σάλτσα. Από τις μετρήσεις τους για τη συμπεριφορά των φάσεων, οι ερευνητές κατέληξαν σε μια επιστημονικά ακριβή συνταγή που μπορεί να αποφύγει το δυσάρεστο σβόλιασμα.
